Catalan cuisine is a perfect mix of tradition and innovation. The most typical dishes are based on very simple ingredients, but their mix is  extremely tasty.
Cataluña is usually associated to the sea and  without doubt deliciuous  seafood dishes are very common here. However, Cataluña has a very special position beteween Mediterranean sea and Pyrenees. Sea and mountain dishes, which combines seafood and meat in perfect armony, are also very typical. Pollo en gambas de Palomós (Chicken with Palomós prawns) is a clear example of this mix. It is a very yummy dish and as an old proverb says,  the proof of the pudding is in the eating!

  • 1 chicken
  • 500 g. Palomós prawns
  • 1l. seafood stock
  • 1 onion
  • 1 leek
  • garlic
  • cinnamon
  • 3 tomatoes
  • olive oil
  • salt
  • Sauce: almond, parsely, chocolate and chicken liver

Chop the chicken and add salt. Put some oil in a frying pan and brown the chicken. In the same frying pan cook the chopped vegetables and then add the seafood stock. Add the prawns and the sauce. Cook it and finally add the chicken. Cook it for some minutes and then serve it.
